Greek Turkey Meatballs with Cucumber Mint Salsa

Oh my goodness… these are so good! I made them last night and everybody (including the picky child!) loved them. Don’t tell anybody, but this meal is pretty good for you too, plus it was quick. I got this cooked and on the table in about 30 minutes. Hallelujah!

Greek Style Turkey Meatballsturkey meatballs

1 lb of ground turkey
1/2 cup of gluten free bread crumbs
2 cloves of minced garlic
1 whole egg (organic or local)
2 -3 drops of doTERRA lemon essential oil (or 1 tbs of lemon juice)
1 teaspoon dried oregano
1 teaspoon chopped parsley
1/2 teaspoon sea salt
1/4 teaspoon black pepper
olive oil

Preheat oven to 400.
Line a cookie sheet with foil. Brush a light coating of olive oil on the foil. Add ground turkey, bread crumbs, garlic, egg, oregano, lemon oil, salt and pepper to a large bowl and mix well. Make small meatballs (I used a well rounded tablespoon) by rolling in your hands. Place meatballs on the oiled cookie sheet and place in the oven for 10 minutes. Turn meatballs over and cook for 10 more minutes. If you make large meatballs, they will need to cook longer. Serve with hummus, gluten free pita bread and cucumber salsa.

Cucumber Mint Salsa

1/2 English Cucumber
8 – 10 Cherry Tomatoes
2 Handfuls of Fresh Mint (Probably about 1/4 cup before it is chopped)
2 Drops doTERRA Lemon Oil or 1 tbs of lemon juice
3 Tbs of Olive Oil
1 Teaspoon of White Wine Vinegar
Salt and Pepper to taste

Dice cucumber and tomatoes. Chop the mint. Combine all ingredients and serve with meatballs. (do this while the meatballs are cooking to save time in the kitchen. I also think this whole meal could be prepared early and eaten a few days later! Freeze the meatballs and have them ready! No excuses for eating crap!)

To round out this meal I served it with roasted broccoli and cauliflower. A greek salad would have worked too!
