Oh yum! I took one of my mom’s recipes and gave it a makeover today. We always eat a delish breakfast casserole on Christmas – but it is very rich and not a good everyday food choice. The OG recipe has sour cream, a ton of cheddar cheese, english muffins, real sausage and every egg is with the yolk. So, I lightened it up a bit, took out the carbs and made it vegetarian friendly.
One of the great things about this casserole is that I can cut it up into single servings, put it in a baggie and heat it up in the microwave on weekday mornings. Good protein to go! Whoo hoo!
Lulu’s Protein Packed Breakfast Casserole
3 whole eggs
8 egg whites
1 tablespoon of fat free greek yogurt
6 morning star farms sausage patties, regular flavor
1 cup of spinach
1 tablespoon of feta cheese
Salt, Pepper and Garlic Powder
Cook the veggie sausage in a skillet, set aside to cool. Beat eggs and egg whites together. Beat in the yogurt and salt, pepper and a pinch of garlic powder. Chop up the zucchini, sausages and tear the spinach. Spray casserole dish with non-stick spray. Pour the egg mixture in the pan. Top with remaining ingredients including the cheese. Bake at 375 for 25 – 30 minutes.
