Let the cleansing begin!

Salty, bloated and tired! This is how I feel after days of stuffing my face with pie, stuffing, mac & cheese and this delicious coconut thingie my sister in law’s mama made – its time to eat clean again or else I am going to have to resize my wedding ring. I am starting with water – and lots of it. I also made asparagus soup to eat green & clean. Here is the recipe

2 bunches of asparagus – trim off the tough ends
3 cups of organic veggie or chicken broth
1/2 of a small red onion, sliced
1 teaspoon of minced garlic
a swirl of olive oil
a dash or 4 of white wine vinegar
salt, pepper and a dash of red pepper

simmer the onion and garlic on medium in the olive oil
add the asparagus (add a dash of salt & pepper – it’s a cook’s trick to season as you go)
simmer for about 5 minutes, stirring around to make sure nothing sticks
add the broth and simmer for 10 minutes
shake a few splashes of vinegar in there….
next you add more seasoning to taste

add the mixture in small batches into a blender
blend in batches until it’s all creamy
taste it for seasoning, if it tastes too “green” or bland, add a dash of vinegar and red pepper, that should do the trick – the vinegar will brighten the flavor and the red pepper will give it slight pep
